Our Dairy Products

The Milk
We offer 3 types of milk – whole, 2%, and fat free, which are all processed in the Grade A processing plant located on the Hails' farm. The whole milk is a full-fat milk that does not need to be "fortified with vitamins A and D.” Unlike most milk sold in stores, which is characterized by synthetic vitamins, our milk maintains its natural state because we ensure that the product keeps its essential nutrients. This milk has superior quality, and it achieved a perfect score of 100 points from The Cornucopia Institute in Wisconsin (Hails Family Farm’s overall operation has been recognized as “outstanding” by Cornucopia).
Our customers always notice the delicious cream on top of our milk, a result of being spared the homogenization and ultra-pasteurization processes that destroy the nutrients in other brands of milk.
Homogenization: "is the process of breaking up…fat into smaller sizes so that it no longer separates from the milk…This is accomplished by forcing the milk at high pressure through small orifices” (disabled-world.com). As a result, “this process unnaturally increases the surface area of fat, exposing it to air, in which oxidation occurs and increases the susceptibility to spoilage” (Lipinski, westonaprice.org).
The homogenized milk sold in stores will not spoil, however, because it is also ultra-pasteurized, which gives the milk a shelf life of four weeks (as opposed to a natural shelf life of two weeks).
Ultra-pasteurization: is the process in which the milk “is heated to not less than 28 degrees F for two seconds” (idfa.org). This intense heat kills all bacteria, both bad and good, as well as the vitamins that are fundamental components of milk. The product that remains after ultra-pasteurization can no longer be classified as milk unless vitamins are added back into the product.
Our milk is shipped by Albert’s Organics, a national “distributor of quality organically grown produce and perishable items” (albertsorganics.com). Albert’s Organics then delivers the product to fine health food stores along the East coast, from Atlanta, Georgia to Newport, Rhode Island.

Yogurt
Our yogurt, which comes in plain, vanilla, and strawberry flavors, is sold in a drinkable “European style” because it is free from thickening agents. As there are no gelatins – thickeners made from animal by-products, vegetarians are free to enjoy our product. The yogurt is prepared in a 24-hr. minimum culture set, which increases the lactobacillus acidophilus culture. Research has shown that consumption of acidophilus has aided in fighting allergies, protecting against bad bacteria, and preventing colon cancer (85, 94, Fallon, Nourishing Traditions). Many of our customers like to drink it as is or pour it over their cereal.

Butter
Our butter has a deep, golden color, a result of being made from milk produced by cows whose diet is 100% grass-fed from April through November. This grass-fed diet leads to a high CLA content in the butter.
CLA: is “a newly discovered good fat called ‘conjugated linoleic acid’ that may be a potent cancer fighter. In animal studies, very small amounts of CLA have blocked all three stages of cancer: 1) initiation, 2) promotion, and 3) metastasis. Most anti-cancer agents block only one of these stages. What's more, CLA has slowed the growth of an unusually wide variety of tumors, including cancers of the skin, breast, prostate, and colon” (Robinson, eatwild.com/cla.html).
